Lemon Zucchini Skillet with Salmon

This is a crowd pleaser and a great summer dish. It is quick enough for a weeknight meal and packed with so much flavor.

Ingredients

  • 4 salmon fillets- fresh or frozen- skinless and boneless
  • 1 15 oz can of cannellini beans-drained and rinsed
  • 3 medium zucchini
  • 1 cup cooked quinoa
  • Zest of 1 lemon
  • 3 Tablespoons Olive ol
  • 2 cloves of garlic- minced
  • Grated Parmesan cheese- optional
  • Salt and Pepper
  • Red pepper flakes- optional
  • Fresh Chopped basil

Instructions

  1. 1. Preheat oven to 425 degrees
  2. 2. Place salmon on a baking sheet and season with salt and pepper
  3. 3. Cook according to package instruction- or bake about 20 minutes

  5. 4. Spiralize zucchini using blade D- and trim
  6. 5. Heat olive oil in skillet on medium heat
  7. 6. When oil is heated- add minced garlic and sauté until fragrant
  8. 7. Add trimmed zucchini noodles to skillet, season with salt and pepper, and cook until heated through and somewhat tender
  9. 8. Add beans and cooked quinoa and toss until heated through
  10. 9. Season with salt and pepper and red pepper flakes if desired
  11. 10. Add the lemon zest and toss together
  12. 11. Place zucchnini mixture on bowls and top with grated Parmesan and fresh chopped basil
  13. 12. Place salmon fillet on top and serve
